How to Make Delicious and Nutritious Banana Protein Pancakes in 15 Minutes

Trying to decide what to eat for breakfast? Need something healthy and satisfying? Here's what you need! The Banana Protein Pancakes recipe that will fuel your day with goodness.

Ingredients:

  • 1 large ripe banana

  • 2 large eggs

  • 1/4 cup of rolled oats (optional for extra fiber)

  • 1/2 cup of protein powder (vanilla or your preferred flavor)

  • 1/4 teaspoon of baking powder

  • 1/2 teaspoon of vanilla extract

  • 1/2 teaspoon of ground cinnamon (optional)

  • A pinch of salt

  • Cooking spray or a small amount of oil for the pan

Instructions:

  1. Prepare the Banana Mixture:

  • In a medium bowl, mash the banana until smooth. It's okay to have some small lumps.

  1. Add Wet Ingredients:

  • Crack the eggs into the bowl with the mashed banana. Add the vanilla extract and mix well until fully combined.

Incorporate Dry Ingredients:

  • If you're using rolled oats, grind them in a blender or food processor until they form a flour-like consistency.

  • Add the oats (if using), protein powder, baking powder, cinnamon, and salt to the banana mixture. Stir until everything is well combined. The batter should be thick but pourable. If it's too thick, you can add a splash of milk or water to reach the desired consistency.

Cook the Pancakes:

  • Heat a non-stick skillet or griddle over medium heat. Lightly coat with cooking spray or a small amount of oil.

  • Pour about 1/4 cup of batter onto the skillet for each pancake. Use the back of a spoon to spread the batter into a circle if needed.

  • Cook for 2-3 minutes or until bubbles form on the surface and the edges start to set. Flip the pancakes and cook for an additional 1-2 minutes until golden brown and cooked through.

Serve:

  • Serve the pancakes warm with your favorite toppings such as fresh fruit, a dollop of Greek yogurt, a drizzle of honey or maple syrup, or a sprinkle of nuts and seeds.

A delicious banana protein pancake will boost energy levels and keep you full until lunchtime. The banana adds natural sweetness, while the protein powder and eggs provide a protein boost to keep you feeling full and energized. The oats give these pancakes a lovely texture and provide a good source of fiber.
