How to Make Delicious and Nutritious Banana Protein Pancakes in 15 Minutes

  • 1 large ripe banana

  • 2 large eggs

  • 1/4 teaspoon of baking powder

  • 1/2 teaspoon of vanilla extract

  • 1/2 teaspoon of ground cinnamon (optional)

Instructions:


  1. Prepare the Banana Mixture:

  • In a medium bowl, mash the banana until smooth. It's okay to have some small lumps.

  1. Add Wet Ingredients:

  • Crack the eggs into the bowl with the mashed banana. Add the vanilla extract and mix well until fully combined.

Incorporate Dry Ingredients:

  • If you're using rolled oats, grind them in a blender or food processor until they form a flour-like consistency.

  • Add the oats (if using), protein powder, baking powder, cinnamon, and salt to the banana mixture. Stir until everything is well combined. The batter should be thick but pourable. If it's too thick, you can add a splash of milk or water to reach the desired consistency.



Cook the Pancakes:

  • Heat a non-stick skillet or griddle over medium heat. Lightly coat with cooking spray or a small amount of oil.

  • Pour about 1/4 cup of batter onto the skillet for each pancake. Use the back of a spoon to spread the batter into a circle if needed.
